Milk Safety: From Outbreak Prevention to Patient Treatment

This summer, Knoxville experienced a significant E. coli outbreak related to raw milk consumption. KAND is proud to start our 2018-2019 year with two speakers who will present on the public health and clinical management issues related to milk safety and outbreaks.

Dr. Gina Pighetti is an associate professor of Animal Sciences from UT Knoxville who will discuss dairying and milk safety. Her research aims to improve dairy cow health, productivity and the safety of milk in our food supply. As part of her presentation, she will discuss the role of pasteurization in milk safety. Mary Beth Pierce, a clinical nutrition specialist from East Tennessee Children’s Hospital, will review clinical treatment considerations when caring for a patient severely affected by an E. coli infection.
