listeriaFREE 1-Hour Online Food Safety Training

Researchers with the Department of Food Science & Human Nutrition at Colorado State University are seeking registered dietitians, dietary managers, and dietary staff who work in long term care to participate in a free one-hour online food safety training module “Listeria Control and Safe Food Training for Dietary Managers”. Go to http://www.fshn.cahs.colostate.edu/extension/safefoodtraining.aspx.

This program is approved for 1 CEU through the Certifying Board for Dietary Managers (CBDM) and the Colorado Dietetic Association (CDA) until August 1, 2010. For further information, contact Mary Schroeder, project coordinator at (970) 491-7335.

In celebration of National Nutrition Month, Jennifer Nicklas and Rachel Kinney organized a successful cook-off at the University of Tennessee’s Food Science Department. Thanks go to Dr. Mount for the use of these facilities, and to EarthFare who sponsored the food.

Three nutrition student finalists won cash prizes for their vegetable dishes: 1st place winner Karen Lacey took home $200, 2nd place and $100 went to senior Jennifer Lee, and dietetic intern Claudia Favre picked up $50 and the 3rd place title.  Check back here for recipes!

KDDA interns & dietitians at the Knoxville Marathon

KDDA dietetic interns and dietitians participated in the food booth at the Knoxville Marathon, which was organized by intern Karen Lacey and her husband Eric. Sarah Griswold spearheaded the purchase of aprons emblazoned with KDDA’s logo and website to promote RDs in Knoxville for National Nutrition Month. Aprons are available for purchase for $10; email Sarah at kddard@yahoo.com.
